Thyme CO2 (SELECT)

Adam Michael has this to say “Within the headspace I detect an aroma that has strong lemon mousse and creamy orange flavoured yogurt nuances. Once this has passes the aroma is classic thyme, really herbaceous and actually reminiscent of the smell that exudes out of the mixed herb shaker. In keeping with many CO2 extracts the aroma profile is more rounded, softer and whole than the essential oil offerings.”

Produced from the dried leaves of Thymus vulgaris, orange red in colour and of a pourable viscosity. The composition of the volatile compounds are, 0.26% alpha pinene, 0.31% beta myrcene, 11.7% p-cymene, 0.24% limonene, 0.57% 1,8 cineole, 4.1% gamma terpinene, 1.7% linalool, 0.72% borneol, 61.6% thymol, 4.0% carvacrol, 2.7% beta caryophyllene.
